How to Make Gingerbread Man Rice Krispie Treats

Step 1: Prepare the Base

  1. Melt the butter in a large pot over low heat.

  • Melt the butter in a large pot over medium low heat.
  • Add the marshmallows and stir until melted. Stir constantly to prevent it from burning
  • Add the vanilla extract, cinnamon, ginger, nutmeg and food coloring and mix well. Add more food coloring until you reach the desired color
  • Pour in the puffed rice cereal and stir until evenly coated
  • Dump the marshmallow cereal mixture on to a piece of large parchment paper. Use a second piece of parchment paper to press down the cereal to about a 1/2 inch to 1 inch thickness (depending on your preference).
  • Let it cool for 5-10 minutes and then use a Gingerbread man tree cookie cutter to cut out Gingerbread shapes.
