Maple Roasted Sweet Potato Bites and Marshmallows

- 2 sweet potatoes about 1 lb
- 12 pecan halves
- 6 medium-sized marshmallows
- 2 tbsp unsalted butter melted
- 2 tbsp maple syrup
- 1/4 tsp salt
Preheat the Oven to 425°F (220°C):
Peel the sweet potatoes and slice them into 6 equal slice to ensure they bake evenly.
Melt the butter in a microwave safe container and drizzle melted butter over the sweet potato slices. Place the potato slices in a bowl and add a pinch of salt. Toss it all together so every slice is covered evenly
Arrange the buttered sweet potatoes on a baking tray, and pop them in the oven for 15 minutes. After that, flip each slice over and bake for another 10 minutes. The edges should be lightly crisp and the centers soft.
Turn the oven to Broil. Drizzle maple syrup over the roasted sweet potato slices
Cut the marshmallows in half and place one half on each sweet potato slices. Pop them back into the oven, under the grill, for about 2-3 minutes just until they start to brown
Remove the tray from the oven and add a pecan half to the top of each sweet potato slice.
