Cranberry Marshmallow Pancakes

- 1 cup pancake mix or your favorite homemade pancake batter Plain or pumpkin flavored mix is the best!
- 1/2 cup fresh cranberries chopped
- 1/4 cup mini marshmallows
Chop the cranberries into smaller pieces. This step is optional, but whole cranberries can be tart
Make the pancake batter, or your favorite pancake recipe. Mix until smooth
Gently fold in the marshmallows and cranberries
Heat a griddle or non-stick skillet over medium heat and grease it lightly with butter or oil. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles start to form on the surface, then flip and cook the other side until golden brown.
